TABLE | Greenheart Probiotic Rich Coconut Yogurt


Happy Valentine’s Day loves! We were thinking of what we could give you all this holiday and when it came down to it, we couldn’t think of anything better than the recipe to our Signature Probiotic Rich Coconut Yogurt. Since we started making this yogurt last year, it has become one of the most popular items on our menu and it continues to be one of our most beloved plant-based foods -- full of rich, creamy decadence. As we play around with a couple different flavors in the kitchen that we can’t wait to share this spring, we wanted to give you the secret behind our plain coconut yogurt, first shared on In My Bowl.

What You’ll Need

  • 3 Cups of fresh coconut meat

  • ¾ Cup of fresh coconut water

  • ½ Tsp of Probiotic Powder or 1 Probiotic Capsule (This can be found in your local Whole Foods.)

Optional Add-In's

  • vanilla bean powder for flavor

  • raw, unfiltered honey or maple syrup to sweeten

  • lemon juice for extra tang

  • rose petals

  • himalayan pink salt

How To

We start by hacking into young thai coconuts to scrape the meat and strain the water. You can also get coconut meat in the frozen section of MOM's Organic Market. Start by blending the coconut meat and water together in a high power blender (we use a Pro Vitamix.) Use more or less water depending on how thick you want the yogurt’s consistency to be. After you’ve reached the ideal consistency you’ll blend in the probiotic powder. You’ll place the yogurt in a container that has at least 2 inches of room to the top.

Cover the container with a cheesecloth and secure it with a rubberband. Leave the container in room temperature overnight (for 10-12 hours) to allow the yogurt to ferment. When the yogurt is done fermenting cover the container with a lid and enjoy within the week!
