TABLE | Green at Heart Green Juice + Smoothie

For me, Valentine’s Day usually marks the end of a three-month long period of hibernation and slight overindulgence that leaves me longing for the lighter, brighter, warmer months of spring when I can get outside, move my body and replace rich, heavy comfort foods with cool and crisp fruits and vegetables.

Although we still have a couple feet of snow on the ground here in Virginia and a few weeks left of winter, I’ve been intent on doing some early internal spring-cleaning with my go-to green juice. Because many of you may be feeling a little sugared-out from those Valentine’s Day sweet treats, as well, I figured I’d share the recipe.

Dark Leafy Greens

Our cells flourish in a slightly alkaline state. When we eat a lot of sugar, dairy products, processed foods and alcohol our bodies can become acidic leading to illness or disease. The green vegetables in this juice are high-alkaline foods that neutralize acidic conditions and filter out pollutants, leaving you feeling clear, healthy and energized. They also help purify the blood, improve circulation and clear congestion.

Ginger

This green juice is loaded with ginger, which means it has quite a spicy kick. Ginger is a powerful anti-inflammatory that works wonders for your immune system. Several studies have demonstrated its ability to destroy cancer cells, treat migraine symptoms and reduce muscle pain.

Juicing

Juicing offers a myriad of health benefits. Because the fiber and pulp are left behind, our bodies absorb the vitamins and minerals in the juice almost instantly, leaving us with increased energy levels, a strengthened immune system and mental clarity. For those with a damaged GI tract, it can also provide a healthy rest for your digestive system.

Don’t have a juicer? With a blender and a few added ingredients, you can make a smoothie that’s just as cleansing.

Green at Heart Green Juice

Makes 1 serving

Ingredients:

3 large celery stalks*

4 kale leaves (with stems)*

1 apple (quartered)*

1/4 bunch of parsley

2-inch piece of ginger

Juice from ½ lemon

¼ tsp. ground coriander

Directions: Wash and prep all ingredients. Put all ingredients except for lemon and coriander through your juicer. When finished, add coriander and juice from lemon. Stir and enjoy immediately.

Greenheart Green Smoothie

Makes 1 serving

Ingredients:

¾ cup water

2 celery stalks*

2 kale leaves (stems removed)*

1 apple (cored and diced)*

¼ - ½ avocado (depending on desired consistency)

1/4 bunch of parsley

1-inch piece of ginger (peeled)

Juice from ½ lemon

¼ tsp. ground coriander

pinch of salt to taste

ice cubes as needed

Directions: Place all ingredients in blender and blend on high until smooth and creamy. Enjoy immediately.
